Belgian-Style Farmhouse Ale with Red Currant & Orange Blossom
First brewed in the spring of 2020 as a dry, Belgian-style ale with Ethiopian honey, 2024 LS IV took on a pronounced, perfumey funk and a mild tartness while aging in French oak barrels. In September 2023, this release was racked onto 120lbs of red currants to emphasize the light acidity borne from the microbial culture embedded in the wood grain. At this stage, weĀ also added just under 2 liters of orange blossom water to boost the honey-like aromatics and emphasize this beerās bold florals.
The interplay between funk and acidity, along with a slight tannic structure from the barrel brings to mind a sophisticated skin contact wine. The final result is a bone dry copper-colored ale with a persistent floral aroma and nuanced fruitĀ character.
